Ingredients to make Sausage, Peppers, and Onions
Let’s start by gathering the ingredients we need to make my Italian sausage peppers and onions recipe. In Chef Speak, this is called the Mise en Place, which translates into Everything in its Place.
Not only does setting your ingredients up ahead of time speed the cooking process, but it also helps ensure you have everything you need to make the dish.
What kind of sausage should I use?
Sweet Italian sausage (mild Italian sausage) is usually used for this dish, but you can use hot Italian sausage (spicy Italian sausage) or a combination of both if you prefer.
You can also use chicken sausage, turkey sausage, chorizo, bratwurst, or any specialty sausage you enjoy.
I prefer using Italian sausage links, but you can also use rope sausage and cut your own portions.
What type of peppers should I use?
This dish is typically made with bell peppers of different colors: one green, one red, and one yellow, orange, or purple. Colored peppers add a nice pop of color to the dish and are usually a little sweeter than green bell peppers, which is why I like to use them, but you can use whatever color you prefer or have on hand.
We prefer sweet onions, but you can use yellow onions or red onions to make this recipe.
How to make Sausage Peppers and Onions
- Remove the sausage from the refrigerator and let it come to room temperature.
- Preheat the oven to 350 degrees F.
- Rinse the peppers with cold water and pat dry with paper towels.
- Cut the peppers in half, then remove the stem and seeds.
- Slice the peppers into strips about ½ inch wide.
- Remove the outer layer of the onion, then cut it in half and slice it into pencil-width slices.
- Place the peppers and onions in a baking dish. Coat them with olive oil, then add the seasoning.
*You can also add your favorite Italian seasoning to the mixture for a more robust flavor. - Toss to combine.
- Place the sausage links on top of the pepper and onion mixture.
- Place the baking dish on the center rack of the preheated oven and cook for 45 minutes, then remove the pan from the oven.
- Stir the mixture and roll over the sausage so both sides get browned
- Cover the baking dish with aluminum foil, return it to the oven, and cook for an additional 15 minutes.
- Remove the baking dish from the oven, and use a slotted spoon or tongs to remove the sausage, peppers, and onions from the pan.
*This dish can also be made in a large skillet in the oven or on the stovetop.
Sweet Italian sausage peppers and onions are as pretty as they are delicious!
Slice the sweet sausage, and toss it with your favorite pasta shape and marinara sauce (or your favorite store-bought tomato sauce) for a delicious pasta dish your whole family will love!
Serve it with grated parmesan cheese and a sprinkle of red pepper flakes.
Any leftover sausage peppers and onions should be stored refrigerated, well covered with plastic wrap or aluminum foil, or in an airtight container for up to 3 days. Reheat on the stovetop over medium-low heat (or in a 350-degree oven) until a temperature of at least 165 degrees has been reached.

If you prefer, you can remove the casing. But there is really no need to. When the sausage is cooked, you won’t even notice it.
You certainly can. Although we used sweet Italian sausage for this recipe, you can also use Italian-style, chicken sausage. Any specialty Italian sausage or hot Italian sausage can also be used to make this recipe.

Looks delicious and one of our favorite meals – grilled sausage and sauted veggies. We have a supply of sausages in the the freezer from The Wurst Kitchen, in Auroa, Il and a supply of frozen peppers in the freezer from the garden so this meal is easy for us to whip up using a variety of different sausages.
