– Olive oil  – Beef chuck  – Garlic  – Pearl onions  – Mushrooms  – Bacon  – Carrots  – Celery  – All-purpose flour – Guinness Beer – Tomato paste – Beef stock – Baby potatoes  – Thyme

Cut the beef into 1 ½ -2" chunks. Pat dry then sprinkle with salt and pepper.

Place your pot over medium-high heat and when the pan is very hot add the olive oil. Add the stew beef and let it sear on one side, turn the beef so that all the sides  are seared.

Add the garlic, onions, and mushrooms to the pot and let them cook for 3-4 minutes. Season with salt and pepper and add the bacon.

Next, add the carrots and celery to the pan. Cook for 3-5 minutes then add the flour and let the mixture cook for an additional  2-3 minutes.
