– olive oil– medium eggplant– mushrooms– bell pepper red or green– medium onion– garlic– large zucchini– crushed tomatoes– artichoke hearts– green olives– kalamata olives
The first step is to sauté the eggplant. When the eggplant has been nicely seared, add the mushrooms, onions, peppers and garlic. Continue to sauté for an additional 5 minutes.
