Gnocchi alla Sorrentina
Our easy to prepare Gnocchi alla Sorrentina is a classic Italian dish with a rich tomato sauce, pillowy soft gnocchi, and creamy fresh mozzarella. It's perfect for dinner parties or busy weeknights.

- 1 bunch fresh basil finely chopped
- ½ cup passata tomato sauce I like cento brand
- ½ cup tomato puree
- 10 oz cherry tomatoes canned
- 8 oz fresh mozzarella small balls
- 2 cloves fresh garlic -finely chopped
- 16 oz gnocchi fresh or dried
- ½ teaspoon red pepper flakes
- ½ teaspoon table salt
- ½ teaspoon black pepper
- ¼ cup Parmigiano-Reggiano or Locatelli Romano, or Parmesan
- 1 tablespoon olive oil
- ¼ cup Locatelli Romano Sprinkled on top of the sauce for serving.

Place a saute pan over medium heat. When the pan is hot add the olive oil to the pan.
Add the chopped garlic to the pan and cook until fragrant (about 1 minute).
Add the passata, cherry tomatoes, and tomato puree to the pan and stir to combine.
Add the table salt, black pepper, and red pepper flakes to the sauce and stir to combine.
Add the parmigiano-reggiano and 2 tablespoon of fresh chopped basil to the sauce. Stir to combine and remove the pan from the heat. Set aside until needed.
Preheat the oven to 400 degrees
Fill a stock pot with water over high heat, add a teaspoon of salt to the water, and bring the water to a rolling boil.
Add the gnocchi to the water and cook per the package instructions. *The gnocchi will float when they are done. While the gnocchi are cooking, place the fresh mozzarella balls on plate lined with a paper towel, then pat dry the mozzarella balls with a paper towel.
Remove the gnocchi from the water with a slotted spoon and place them into the red sauce. Gently stir to combine.
Place the mozzarella over top of the gnocchi and sauce mixture
Place the pan on the top rack of the preheated oven and cook for 3-5 minutes until the sauce is bubbly and the cheese has melted.
Remove the pan from the oven, sprinkle with Locatelli or parmesan cheese, and garnish with fresh basil leaves.
