Gnocchi alla Sorrentina

Our easy to prepare Gnocchi alla Sorrentina is a classic Italian dish with a rich tomato sauce, pillowy soft gnocchi, and creamy fresh mozzarella. It's perfect for dinner parties or busy weeknights.

Ingredients

  • 1 bunch fresh basil finely chopped
  • ½ cup passata tomato sauce I like cento brand
  • ½ cup tomato puree
  • 10 oz cherry tomatoes canned
  • 8 oz fresh mozzarella small balls
  • 2 cloves fresh garlic -finely chopped
  • 16 oz gnocchi fresh or dried
  • ½ teaspoon red pepper flakes
  • ½ teaspoon table salt
  • ½ teaspoon black pepper
  • ¼ cup Parmigiano-Reggiano or Locatelli Romano, or Parmesan
  • 1 tablespoon olive oil
  • ¼ cup Locatelli Romano Sprinkled on top of the sauce for serving.
  • whole basil leaves for garnish

Instructions

  • Place a saute pan over medium heat. When the pan is hot add the olive oil to the pan.
  • Add the chopped garlic to the pan and cook until fragrant (about 1 minute).
  • Add the passata, cherry tomatoes, and tomato puree to the pan and stir to combine.
  • Add the table salt, black pepper, and red pepper flakes to the sauce and stir to combine.
  • Add the parmigiano-reggiano and 2 tablespoon of fresh chopped basil to the sauce. Stir to combine and remove the pan from the heat. Set aside until needed.
  • Preheat the oven to 400 degrees
  • Fill a stock pot with water over high heat, add a teaspoon of salt to the water, and bring the water to a rolling boil.
  • Add the gnocchi to the water and cook per the package instructions.
    *The gnocchi will float when they are done.
  • While the gnocchi are cooking, place the fresh mozzarella balls on plate lined with a paper towel, then pat dry the mozzarella balls with a paper towel.
  • Remove the gnocchi from the water with a slotted spoon and place them into the red sauce. Gently stir to combine.
  • Place the mozzarella over top of the gnocchi and sauce mixture
  • Place the pan on the top rack of the preheated oven and cook for 3-5 minutes until the sauce is bubbly and the cheese has melted.
  • Remove the pan from the oven, sprinkle with Locatelli or parmesan cheese, and garnish with fresh basil leaves.
