Equipment

  • Large pot
  • Sautee pan
  • Strainer

Ingredients

Ingredients:

  • 5 pounds Yukon Gold potatoes peeled and cut into chunks
  • 10 tbs unsalted butter divided
  • ¾ cup half and half
  • 2 tbs garlic finely chopped
  • 2 tablespoons prepared horseradish
  • 1 teaspoon Kosher salt
  • 1½ teaspoons ground black pepper

Instructions

Instructions:

  • Boil the cut, peeled Yukon gold potatoes until fork tender (about 20-25 minutes in a large pot.
  • Strain the potatoes and return to the same pot.
  • Mash the potatoes. It is fine to leave them slightly lumpy, as you can mash further.
  • In a sauté pan, melt 8 tablespoon of the unsalted butter over medium heat before adding the garlic and sautéing until fragrant (30 seconds to 1 minute).
  • Reduce the heat to medium-low, and add the half-and-half to the sauté pan.
  • Mix the milk into the garlic butter gently using a whisk until fully combined. This is homemade heavy cream.
  • Add the homemade heavy cream to the mashed potatoes.
  • Gently stir the heavy cream into the mashed potatoes until fully incorporated.
  • Add the salt and pepper to the pot of potatoes.
  • Stir in the salt, pepper, and horseradish before transferring to a serving bowl.
  • Once transferred to a serving bowl, place cut pieces of 2 tbs of butter on top of the cooked, hot mashed potatoes
  • Garnish the buttered mashed potatoes with chopped chives.

Notes

Ingredient Substitutions
  • Yukon Gold → Russet potatoes for fluffier texture.
  • Half and Half→ Heavy cream or whole milk.
  • Prepared horseradish → Freshly grated (use less, it's stronger).
  • Butter → Brown butter for added depth.

Recipe Variations
  • Homestyle Horseradish Mashed Potatoes: Leave the skins on for a more rustic texture.
  • Garlic Horseradish Mashed Potatoes: Add roasted garlic for a mellow sweetness that balances the sharpness.
  • Cheddar Horseradish Mashed Potatoes: Fold in sharp cheddar for a richer, steakhouse-style version.
  • Loaded Horseradish Mash: Add bacon, chives, and sour cream to turn it into a full-on side-dish centerpiece.
  • Horseradish Cream Mash: Use horseradish cream instead of straight horseradish for a milder, smoother flavor.

Chef Tips
  • Start potatoes in cold salted water for even cooking.
  • Don't overmix the potatoes to avoid a gummy texture
  • Warm the half-and-half and butter before adding them for a smoother consistency.
  • Use a potato ricer instead of a masher. It gives you that silky, restaurant-quality texture without overworking the starch.
  • Add the horseradish gradually and taste as you go.

Store in an airtight container in the refrigerator for up to 3 to 4 days. Reheat gently on the stovetop or in the microwave after adding a splash of milk or cream to restore creaminess.

Recipe FAQs
Can I make horseradish mashed potatoes ahead of time?
Yes, you can make them a day in advance and reheat before serving. Add a little extra cream when reheating to keep them smooth.
Can I use a different type of potato?
Yes, but Yukon gold potatoes are ideal for their naturally creamy texture. Russets will be fluffier but slightly less rich.
Is horseradish very spicy in this recipe?
It adds a gentle heat rather than overwhelming spice, especially when balanced with butter and cream.
